Carrot and Drumstick Sambar

Hi Friends,
                    Sambar is a traditional dish of South India. Every family has its own ways on this recipe.
It can be prepared with many vegetables. Sambar is served in every functions and festivals with boiled rice in South India.This is the favorite dish of South India. It goes well with anything. Today we'll see the most common way of making Sambar.

Carrot and Drumstick Sambar
 


INGREDIENTS :
  • 1 cup of Yellow Split Peas [thuvaram paruppu ]
  • 2 teaspoons of Sunflower Oil
  • 1 teaspoon of Mustard Seeds
  • 1/2 teaspoon of split Black Gram [ ulundhu paruppu ]
  • 1/4 teaspoon of Fenugreek
  • Coriander Leaves and Curry Leaves
  • 4 big Onions
  • 4 Tomatoes
  • 4 Green Chillies
  • 1 Drumstick
  • 2 Carrots
  • 2 Brinjals
  • 1/2 Turmeric Powder
  • 3 teaspoon of Red Chilly Powder
  • A small lemon sized Tamarind Ball
  • 1/2 teaspoon of Asafoetida
  • Salt as you wish
Procedure :
  • Boil Yellow Split Peas in a pressure cooker for two whistles.
  • In a hot pan pour 2 teaspoon of Sunflower Oil then add Mustard Seeds,                                Split Black Gram and Fenugreek.
  • After becomes golden brown add Curry Leaves and Chopped Onion, Tomatoes and Vegetables one by one.
  • Add Turmeric Powder and Salt and saute it for 2 minutes till Tomatoes becomes like juice.
  • The prepared gravy should be added with Boiled Split Yellow Peas and add Tamarind Extract, Red Chilly Powder, Coriander Powder and Asafoetida.
  • Add required water till it gets the consistency of Sambar as you like.
  • Reduce the flame after Sambar comes to the boiling stage.
  • Our delicious and tasty Sambar will be ready after 15 minutes. Garnish it with Coriander Leaves or anything you wish.

Servings :
                      Sambar can be served with boiled rice. Papadum [appalam] is a best side dish for Sambar Rice. It can be also served with idli, dosa and any Indian Breakfast.

Note:        
  • Instead of carrots we can use radish, a piece of white pumpkin, pieces of banana stem, Sabre Beans [Avarakai].  
  • When we cook mustard seeds, split black gram and fenugreek, We must be very careful. Don't let it to become black. Otherwise the flavour of the Sambar will be spoiled.
  • Instead of tamarind  we can use kacha Mango [If you don't have tamarind]. The mango will add great flavour to Sambar.
